Ripen coffee cherries are harvested by farmers, after harvesting coffee are taken to coffee collection sites by farmers by using head or bicycle transportation. On coffee collection site coffee is sorted by floating coffee, coffee is submerged in bucket full of water and all suspended coffee are removed to make sure that all coffee is higher quality. High quality coffee is weighed, after weighing quantity of coffee is recorded in delivering book and delivering form after this, farmer is paid according quantity of coffee delivered. Coffee is then transported from coffee collection site to Sholi coffee washing station. The high quality coffee cherries are pulped by a pulping machine. Once this is done, the beans with their mucilage are then fermented for 12-18 hours depends on weather conditions to remove mucilage. After fermentation coffee beans are washed then after coffee beans are soaked for 6 hours. After fermentation, washing and soaking processes, coffee is taken for skin drying (pre-drying) where the remaining defects are removed. Then coffee is dried on drying tables or in parabolic dryer houses targeting the moisture of 11- 12%. In parabolic drier house, it takes 14 days for a fully washed coffee to get dried, while on drying tables it takes 20-26 days for fully washed coffee to get dried.
When coffee cherries are delivered to Sholi coffee washing station, they are hand sorted to select higher quality coffee, after sorting coffee, selected cherries are submerged in floatation tank to remove all remaining defects. After this step coffee cherries are taken and placed on drying tables where they are then dried naturally in the sun. After four days, coffee cherries are fermented for 24 hours. Then coffee remains on drying tables for 40-50 days to get dried.
